Truffles are known for their aroma and widely used in high-cuisine to give that unique flavour to a dish. Not only can you use truffles while cooking, it is also possible to infuse food with its aroma. Not all types of food-products are suitable for this technique as the product needs to be having a fatty component to be able to absorb the aroma. In today’s blogpost we are going to explain you how to infuse eggs with truffles.
And the good news is that when you use a truffle to infuse a product, it does not lose its aroma. That means that you can use the same truffle for different purposes and use it again to cook with it.
To infuse eggs you can use all kinds,: from ostrich to quail eggs, but keep in mind that you will need a bigger quantity of truffles for biggers eggs to reach the right amount of aroma and taste. You must also take into account the truffle´s degree of maturity. When a truffle is harvested at the beginning of the season it will always have less aroma than at the end when its degree of maturity is at its best. Although the black Winter truffle (Tuber melanosporum) gives you the best results, it is possible to use any kind of truffle. The technique to aromatise the eggs will not change.
Procedure: we will start by selecting the eggs that we are going to infuse, so that they do not present cracks, stains or other defects. Next, while watching out not to break them, we will clean the shell with water and dry them carefully.
Take a tupper and place the eggs inside together with one or two black truffles which we place strategically in the center so that all eggs are equally close. Close the tupper and keep it in the fridge for a few days. Because of the humidity that can be produced it is important to clean any kind of condens you might find in the tupper. Do this every day using a kitchen towel and leave the products dry before you put it back in the fridge.
You can prepare your truffle infused eggs as you would with normal eggs by boiling them, making an omelette, scrambled eggs etc. You will notice a hint of truffle that will bring your eggs to a next level.
Also in any kind of sauce such as bechamel, mayonnaise or carbonara using truffle infused eggs give a very special flavour.
