A few days ago, on the 15th of March to be exact, the black truffle season officially ended so it is time to look back on the past few months and share our experiences with you.
The black truffle´s (Tuber Melanosporum Vitt.) season is from the 15th of November till the 15th of March, but the best truffles are being harvest with the start of the New Year in January and February.
Each year people try to extend the season to be able to enjoy this delicacy a bit longer but when we listen to the Truferos (experts who harvest truffles) they will tell us that it is better to leave the last truffles under ground so that their spores can be the beginning of new and better truffles next year.
Due to drought and the absence of rainfall during the summer months in 2016 we did not have our best season. Fewer and smaller truffles were being harvested than previous years. The biggest catch of this season was a beautiful truffle of 550 gr.
Even though we cannot enjoy fresh truffles anymore we still have our truffle speciality products to add that little bit of luxury to our dishes. That is why we have decided to share a delicious recipe with one of those with you next week!
